With the holiday season upon us, I have been trying to figure out what to make for all those holiday potluck gatherings. I find it always hard to decide what to bring that tastes great reheated or cold because it may cool down as it sits for a while on the potluck table.

This year, I found this simple recipe for Olives in a Blanket, a nice twist to the typical Pig in a Blanket. I was baking new bread recipes this morning and had some extra gluten-free dough, so I decided to test this recipe by making a simple variation. The recipe called for garlic stuffed olives, which I sadly didn’t have. Instead, I used pimiento stuffed olives and my lean gluten-free bread dough and sprinkled with black sesame seeds and everything bagel seasoning. 

They came out great and Carlos and I had to taste all of them. Then I thought, what about cheese stuffed olives in a blanket? A second batch was shortly in the oven with some hand stuffed olives with a seasoned cream cheese stuffing. Yum. 

Unfortunately, we ate all of these treats while they were right out of the oven and hot. Clearly, more test baking is needed, but next time, we have to let them cool down before eating them (if we have enough self-control).

I can only recommend this snack. The original recipe calls for store bought dough like Pillsbury crescent rolls and stuffed olives from a jar, so this is truly a quick and simple recipe. But there are no limits to your creativity. Happy snacking.
