I went to the store and bought kale and feta cheese to make the healthiest grilled cheese sandwich that I have made yet. I also happen to have Sunflower Sourdough bread (100% Whole grain with Whole Wheat and a Rye Sourdough starter) making the sandwich even healthier.
It was delicious! The creamy but distinct flavor of the feta cheese and the hearty bread with its nutty notes from the sunflower seeds made it a great pairing. The kale stood up well to the other flavors and didn’t suffer when heated up as I grilled the sandwich in the cast iron pan. I used a curly kale, which was a bit difficult to keep from falling off the bread until the cheese started to melt. After a short fight, I used a sauce pan to weigh everything down while melting the cheese, that did the trick. A flat leaf kale would have made it easier but maybe not as pretty to look at.
